Cranberry Pistachio Shortbread (Canada)

I know shortbread is from Scotland, and pistachio from Iran. But, this recipe is adapted from Fanny's shortbread recipe. She's the owner of an independent local bakery in East Vancouver, Oh Sweet Day - get their cheesecake in farmers market throughout the summer (espresso is my favourite).

I added pistachio and orange zest, then dip them in dark chocolate. I think it tastes like Christmas and best enjoyed with a cup of coffee or tea while looking out the window, watching Vancouver's soggy winter. While this year's celebration is looking a little different, I hope these cookies bring a party to your tastebuds!
