Hallongrotta (Sweden)

Hallongrotta translates to "raspberry cave" - they're exactly that, butter cookies rolled in walnuts, filled with raspberry jam. I pressed my thumb into the dough to make space for the jam, and repeated the process a few times on each cookie so you get a little more raspberry. They appeared in Sweden around the 1800s, a time when coffee was considered luxurious on this part of the world, and coffee shops were closed to women. And so, kafferep was born, basically coffee and snacks at the comfort of their own home. Screw gender status quo - nothing can get in the way of women and their caffeine fix.
