Salish Shortbread (Canada)
This cookie was inspired by the traditional foods of the Coast Salish people. I picked hazelnut and honey to highlight, sweet and earthy. The subtle sweetness you taste here is the North Okanagan fireweed honey, people call it the champagne of honey.
I baked this to honour the place I now call home. It was Indigenous History month when I became a citizen, and during the ceremony, I learned a Cree word - "tawâw", meaning "come in, you are welcome, there is space."
