Cranberry Orange Shortbread

This combo is a classic that never gets old, and I love citrusy cookies - the brightness is welcomed in the dark, cold winter. Shortbreads are easy to turn into vegan cookies too, I tend to have pretty good success without losing the flavour and texture.

 Recipe by Emma Duckworth, here. I turned this vegan by using plant-based butter, and omitted the butter for the glaze. Rubbing orange zest with the sugar really does make a difference - it smells wonderful too!
