Pandan Coconut & Vanilla Sugar Cookies

 I had an idea of making cat shaped coconut cookie, because last year I adopted a very sweet senior cat named Coco, and I was gonna name it sweet coconut cookie. But my cookie cutter and stamp broke, so no Coco cookie this year. Instead, I followed sugar cookies recipe, and tweaked them for the pandan flavour. 

The green one is pandan cookie with icing sugar and sprinkle of coconut. Pandan is a tropical plant, the leaves are used for cooking and flavouring in Southeast Asian dishes. It tastes earthy and toasty, a bit coconut-y. The white one is the classic vanilla.
